It's been a while since we've ordered from Hong Kong's Cafe.
Have to get my favorite, Iced Lemon Tea. You get these solid lemon slices to add to the flavor.
Stir Fried Beef with Flat Rice Noodle. I grew up eating this. It's also known as dried stir fry because there's not sauce coming out of the dish after it's made. Here's a recipe, should you want to check that out.
My other favorite and quick fix, are egg tart. The deal with the egg tarts is really the crust. Of course the center has to be good and custard well, but that's a given. There are puff pastry shell, like palmier with different layers. Then there are cookie shell. Both are tricky to make. The puff pastry shell, you don't want to be so many layers that it falls apart and not hold the tart well. Yet, you want the layers to be delicious every bite you take. The cookie shell cannot be too sweet, even though it's called a cookie shell. A lot of egg tart newbies falls into the trap of that one. If it's too sweet, it competes with the custard's taste, which defeats your purpose.
Anyway, back to HK's Cafe, they're finally opened for 30% dine-in. During the pandemic, they had to let their staff go, it was truly ran by mom & pop. So now, a year later, they have to rehire and train new help. Things are slower, but definitely getting back on track. Please support your local small businesses.
