Breakfast cups

So, I saw this pin and was totally inspired. Of course, it was really a Martha's doing. That smart woman and her empire!

Anyway, we lined our muffin cups with sprayed coconut oil. Then lined it with proscuitto. The problem is that the pre-packaged ones from the store is as thin as paper, make lining the bottom a little challenge. Then David had mixed up the eggs, put salt and pepper, a little spinach, and pour it into the cups.
A few minutes later, viola! It came out pretty, but tasted a tad dry. So, now we know what to do for the next time.

I'm all about food in the shape of a cup, what should we try next?
